Located in Niimi City, nestled in the mountains of the Chugoku region at the far northwest of Okayama Prefecture, Chozameya manages everything from sturgeon farming to the processing and sale of caviar and sturgeon meat.

The Takahashi River system, which flows through western Okayama, boasts clear, beautiful water and abundant flow. Niimi City is the source of this river.

Fresh water is essential for producing rich, odor-free caviar, and the karst landscape provides rare, hard water in Japan, closely resembling the water quality of sturgeon's native habitat, making this area ideal for farming sturgeon domestically.

位于冈山县最西北端的中国山地深处,新见市的蝶鲟屋从鲟鱼的养殖到鱼子酱和鲟鱼肉等产品的加工与销售,一体化经营。

流经冈山县西部的高梁川水系以清澈的水质和丰富的水量而闻名。新见市正是这条河的源头。

为了制作无腥味、浓郁的鱼子酱,新鲜的水至关重要。这里的地下水是日本罕见的硬水,与鲟鱼的原产地水质相近,因此是国内非常适合养殖鲟鱼的地区。
